Ingredients:

  • 1.5 kg chicken, cut into pieces
  • 3 onions, finely chopped
  • 4 tomatoes, diced
  • 5 cloves garlic, minced
  • 2-inch ginger, grated
  • 2-3 green chilies, chopped
  • 1/2 cup plain yogurt
  • 2 tbsp vegetable oil
  • 1 tsp cumin seeds
  • 1 cinnamon stick
  • 3-4 cloves
  • 3-4 cardamom pods
  • 1 tsp turmeric powder
  • 2 tbsp coriander powder
  • 1 tbsp cumin powder
  • 1 tbsp garam masala
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions:

  1. Heat the oil in a large pan and add the cumin seeds, cinnamon stick, cloves, and cardamom pods. Sauté until fragrant.
  2. Add the chopped onions and cook until golden brown.
  3. Stir in the minced garlic, grated ginger, and green chilies. Cook for a few minutes until the raw smell disappears.
  4. Add the chicken pieces to the pan and cook until they are lightly browned.
  5. Mix in the turmeric powder, coriander powder, and cumin powder. Stir well to coat the chicken.
  6. Add the diced tomatoes and cook until they are soft and the oil separates from the masala.
  7. Pour in the plain yogurt and mix well. Cook for a few minutes until the yogurt is well incorporated.
  8. Add salt to taste and pour in enough water to cover the chicken. Bring to a boil, then reduce the heat and let it simmer for 20-25 minutes, or until the chicken is cooked through.
  9. Sprinkle the garam masala over the curry and give it a final stir.
  10. Garnish with fresh coriander leaves before serving.
  11. Serve the authentic chicken curry with steamed rice or warm naan bread. Enjoy!
