- 3 onions, finely chopped
- 4 tomatoes, diced
- 5 cloves garlic, minced

- 1/2 cup plain yogurt
- 2 tbsp vegetable oil
- 1 tsp cumin seeds
- 1 cinnamon stick
- 3-4 cloves
- 3-4 cardamom pods
- 1 tsp turmeric powder
- 2 tbsp coriander powder
- 1 tbsp cumin powder
- 1 tbsp garam masala
- Salt to taste
- Fresh coriander leaves for garnish
Instructions:
- Heat the oil in a large pan and add the cumin seeds, cinnamon stick, cloves, and cardamom pods. Sauté until fragrant.
- Add the chopped onions and cook until golden brown.
- Stir in the minced garlic, grated ginger, and green chilies. Cook for a few minutes until the raw smell disappears.
- Add the chicken pieces to the pan and cook until they are lightly browned.
- Mix in the turmeric powder, coriander powder, and cumin powder. Stir well to coat the chicken.
- Add the diced tomatoes and cook until they are soft and the oil separates from the masala.

- Add salt to taste and pour in enough water to cover the chicken. Bring to a boil, then reduce the heat and let it simmer for 20-25 minutes, or until the chicken is cooked through.
- Sprinkle the garam masala over the curry and give it a final stir.
- Garnish with fresh coriander leaves before serving.
- Serve the authentic chicken curry with steamed rice or warm naan bread. Enjoy!
